An RPC node is the Besu node that external applications (dApps, wallets, scripts) connect to, through a port mapped with -p in Docker.

It serves the JSON-RPC API (eth_sendTransaction, eth_getBalance, eth_call and the rest). It does not need to be a validator or a bootnode, only a full node with its API ports exposed. One node can wear several hats (bootnode, validator and RPC at once), but separating them is more secure (minimum privilege: only the nodes that external clients actually connect to get their RPC ports mapped).
