A Remote Procedure Call (RPC) is a request by which one program invokes a procedure on another machine, and in blockchains it is the channel through which external applications (dApps, scripts, wallets) talk to nodes, to read state and submit transactions.

JSON-RPC over HTTP is the standard: it fixes the exact format of requests and responses, which carry JSON payloads, and the methods a node offers. A node's RPC port is its front door for that external interaction, and in Docker only the nodes whose ports are mapped with -p are reachable from outside.
